15 MARCH 2017 - KHOKANA, NEPAL: Workers make mustard oil at the Gaabu Jyaasha Oil Mill in Khokana, Nepal. The mustard oil is made by hand with local grown mustard seeds. The seeds are roasted then pressed in a large press operated by a hand screw. The first pressing of oil is sold in local markets around Khokana and shipped to grocery stores in Kathmandu. The seeds are pressed a second time in a mechanical press, and that oil is sold for use in oil massages. The dry remains are sold to local farmers for livestock and chicken feed or composting material. The mill is family owned and has been making mustard oil for seven generations. Mustard oil is used for cooking in North India, Eastern India, Nepal, Bangladesh and Pakistan. In Bengal, Orissa, Assam and Nepal, it is the traditionally preferred oil for cooking.
